Gluten Free Pillsbury Funfetti – Cream Cheese Cupcakes with Vanilla Frosting!

When you get diagnosed with celiac disease or find that you have other gluten intolerances, one of the first thing that goes out the window is the fun of ready made cake mixes suitable for children’s parties.  Like Pillsbury Funfettis.  You lose the ability to quickly run to the store, grab a box, and put together something moist, juicy, decadent simply.  That isn’t to say that you can’t do those things… it’s merely to say that doing so gets harder.

When you bake gluten free, you worry about the texture.  Is it going to fall apart when I bake it?  Is it going to make it more than 2 hours without getting hard?  Is it going to be like eating cotton balls?  And most of the time, you can count on it not making it to the next day (my Apple Cake makes it several days…). 

So when I heard Pillsbury took their Funfetti series and went Gluten Free, I went looking for it.  Couldn’t find it at Safeway.  Not at Target.  Found it at our local Fred Meyer.  Yay Fred Meyer.  The cake mix touts making 24 cupcakes or several cake versions.  I opted for cupcakes.

The recipe on the back calls for whole egg or egg whites.  I opted for whole egg: 1 cup water, 1/3 cup oil, 3 eggs, and cake mix.  I mixed, mixed, mixed.  I tasted.  The batter is super sweet; heck, it’s got candy pieces in it.  I decided I was going to help it out a bit and added 8 ounces of cream cheese to my batter.  Even in my pregnancy state, there are times that I. am. brilliant.

I buttered and dusted the cupcake pans with flour.  I filled the cups 1/2 full.   I used one small cupcake pan and a big cupcake pan.  They both came out done at the same time.  Clean toothpick for the win.

These are amazing.  Light, fluffy, airy.  I finished them with a vanilla frosting.  I felt like a young girl, woman, early 20s college student again… baking something quickly, easily and with candy pieces in the center.  They’ve comfortably sat out for a few hours and haven’t gotten hard.  Like, with any gluten free product, I will be covering them in a gluten free bread box to keep in moisture but…

These are perfect – though, my cream cheese gets some of the credit.  Delish.
